When reading a glycemic index chart, what should you pay attention to?

The Glycemic index measures how quickly a food raises blood sugar levels. Food is ranked from zero to 100 according to this measure. The blood sugar level rises rapidly after eating foods high in glycemic index, also known as GIs. It is often the case - but not always - that these foods with high GI scores are high in sugars and carbohydrates.
