SSOPs are written procedures to prevent direct contamination or adulteration of product. Establishements are required to maintain these written procedures on file, and in the United States they must be available to Food Safety and Inspection Service (FSIS) upon request. The FSIS, an agency of the United States Department of Agriculture (USDA), is the public health regulatory agency responsible for ensuring that United States' commercial supply of meat, poultry, and egg products is safe, wholesome, and correctly labeled and packaged. SSOP is considered one of the prerequisite programs of HACCP.
